My godson loves EVERYTHING about cowboys. He loves the outfits, the horses, and lassos, the stories where cowboys sleep under the stars, cooking beans over the fire. If you asked him, I bet he would say he even loves the cow droppings! I wish he was as excited about food, as well, but he isn’t. His parents are having a hard time trying to come up with dishes he would at least try without cringing. The usual kids’ favorites; spaghetti, pizza, burgers – nope, not for him.
Last week he was coming over to spend a couple of days with us. We had all kinds of fun stuff planned for him. We were really excited about his stay!
But I have to admit I was worried about dinner. I wanted to make sure he wouldn’t be starving! But I knew it was going to be hard to find a dish he liked.
That’s when I ran into this Colorado Cowboy Casserole! Needless to say, it was a huge success!
