Butter & Herb Chicken
1 hour to prepare serves 4-6
INGREDIENTS
4 boneless skinless chicken breasts, butterflied
1/2 cup (1 stick) unsalted butter
1/4 cup extra virgin olive oil
1/4 cup fresh lemon juice
1/4 cup chicken broth
3 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh parsley, chopped
1/2 tablespoon fresh dill, chopped
1/2 tablespoon fresh sage, chopped
1/2 tablespoon fresh thyme, chopped
Kosher salt & freshly ground pepper, to taste
PREPARATION
When ready to bake, preheat oven to 375°F and lightly grease a baking dish.
In a small bowl, whisk together the olive oil, lemon juice, chicken broth, minced garlic, rosemary, parsley, dill, sage, and thyme. Season liberally with salt and pepper.
Place chicken breasts in the baking dish and pour sauce over them. Cover and set in the fridge to marinade for 30 minutes to 1 hour. (Do not marinade longer than 2 hours as the lemon juice will make the chicken tough.)
When ready to bake, melt the butter in the microwave. Pour butter evenly over chicken in baking dish. Bake until chicken is cooked through and sauce is simmering, about 25-30 minutes, spooning sauce over chicken a couple of times during baking. Enjoy!
