Quick bread has to be one of our favorite things to make in the kitchen. We like its versatility; almost any quick bread recipe can handle an extra handful of nuts or chocolate or dried fruit, if that’s what you’re feeling like. We like how you’re never really sure if it’s a breakfast, a snack, or a dessert… and that all that really matters is that it’s delicious. And we like that it’s, well, quick. This Choco-Nana-Oat-Nut Quick Bread exemplifies all of those fine qualities. It’s an easy bread, but it still feels like something special.
We’re not trying to say that basic ol’ banana bread doesn’t have its place; it certainly does. But it’s nice every once in a while to gussy it up (and still deal with the spotted bananas on your counter). This recipe adds oats, chocolate chips, and some chopped nuts to the mix. It might take you all of five minutes to mix together, but it’s layered with chewiness from the oats, bursts of sweetness from the chocolate, and crunchy nuts. And all backed by that sweet, mellow banana flavor.
The oats make the bread a bit heartier than your traditional bread, which makes for a nice on-the-go breakfast. We love to use a combination of hazelnuts and walnuts, but really you can use either one… or even none at all. This recipe is light on the chocolate chips because we like the synergy of the choco-nana-oat-nut flavors, but we won’t tell anyone if you toss a few extra in. Happy baking!
