Banana Oat Quick Bread

INGREDIENTS
- 4-5 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 1/2 cups old fashioned oats, divided
- 1 cup brown sugar, packed
- 1/2 cup (1 stick) unsalted butter, melted
- 1/2 cup milk
- 1/2 cup chocolate chips
- 1/2 cup walnuts and/or hazelnuts, chopped
- 2 large eggs
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground nutmeg
PREPARATION
- Preheat oven to 350°F and lightly grease a 9×5-inch loaf pan. Set aside.
- In a large bowl, mix together the eggs, brown sugar, melted butter, and milk. Stir in bananas.
- In a separate bowl, stir together 1 cup of the oats, the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Add to wet ingredients and stir until just combined.
- Fold in chocolate chips and nuts and pour into prepared loaf pan. Top with remaining oats and bake until a toothpick inserted into the center comes out clean, about 60 minutes. If loaf starts to brown too quickly, tent with some aluminum foil.
- Let bread cool in pan 10 minutes before removing. Allow to cool completely before slicing and serving. Enjoy!
