Classic Banana Cake

Banana Cake

30min to prepare; 1 hour to cook; serves 6-8

INGREDIENTS

  • 3 cups flour
  • 2-3 very ripe bananas, diced
  • 1 1/2 cups buttermilk
  • 1 cup granulated sugar
  • 3/4 cup (1 1/2 sticks) butter, softened
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 tablespoon lemon juice
  • 1/2 tablespoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

PREPARATION

  1. Preheat oven to 350°F and grease and flour a 9-inch round cake pan. Set aside.
  2. In a small bowl, mix together the diced banana and lemon juice. Set aside.
  3. In a large bowl, cream together the butter and sugars with an electric mixer. Add eggs one at a time, beating after each addition. Add vanilla and mix on high until light and fluffy.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Alternate adding flour mixture and buttermilk to the butter/sugar mixture, mixing until just incorporated. Fold in diced bananas and pour into prepared cake pan.
  5. Place in oven and reduce heat to 300°F. Bake until a toothpick inserted into the center comes out clean, anywhere from 50-70 minutes.
  6. Remove from oven and place in freezer for 30 minutes to make cake extra moist. Enjoy!
