1 cup of softened butter.
1 ½ cups of honey.
¼ tsp of cream of tartar.
¼ tsp of salt.
½ orange juice.
2 ¼ cups of all purpose flour.
1 ½ cups of dried cranberries.
In a large bowl using an electric mixer, beat on medium speed the butter, honey, cream of tartar, salt and orange juice until well blended. Add in the eggs one at a time while beating. On low, mix in the flour ½ cup at a time and beat together until smooth and well combined. Add in cranberries and mix.
In a greased 9×5 loaf pan, pour the batter and bake for 60 to 70 minutes in a preheated oven to 350°.
Let cool in the pan for 15 minutes before transferring the cake to a serving platter.
Easy, peasy and yummy! This cranberry orange pound cake is very delicious, the combination of cranberries and orange is just amazing. I usually serve this as a dessert with an orange glaze or with coffee at breakfast.
