I’ve never made such an easy fruit cobbler in my entire life.
Seriously, folks, this recipe is a keeper. I was wanting to make my family a dessert for after dinner the other night but I was really short on time. I looked at my cookbooks and nothing wasn’t labor intensive. So, I hopped on the internet and visited one of my favorite blogs, Thorns and Berries. You guys, this gal knows how to cook!
She has come up with some really fun recipes such as this amazingly quick and easy fruit cobbler. I believe she adapted this recipe from The Kitchn website. Anyway, I love how quick and simple it is to make this fruit cobbler and I intend to make it again sometime soon.

There are so many different types of fruit combinations you can use in this cobbler. As you can see by my photo I used a berry blend. However, feel free to sue what you have on hand. This is my favorite way to use up fruit that is going bad or getting to that overly ripe stage. You can also make this into a pumpkin cobbler during those blessed fall months of seasonal baking. Whatever you choose to use just know that the buttery crust of this cobbler tastes more like a sugar cookie than a crust and it’s uh-mazing.

Scoop a big blob into a bowl and top it with plenty of ice cream. If it’s snowing and you’re in your jammies, you might want to add a nice warm cup of decaf coffee as well. A little sprinkle of cinnamon or cardamom might be nice too if you really want to get crazy. Try not to eat the whole pan, because it is delicious the next day as well – even cold!
Seriously, she’s right. You can’t eat this yummy fruit cobbler without ice cream and plenty of it.
