I made this in a pinch with ingredients I had sitting in the pantry. The cake is pretty darn tasty even without the frosting. My peanut butter-loving family says this is now their favorite dessert. And what doesn’t go with peanut butter? You can drizzle chocolate on the frosting or place sliced bananas between a two-layered cake. Your favorite jam would go great dolloped on top of cupcakes! Oh, the possibilities are endless. I hope you enjoy it.

Ingredients
CAKE BATTER
1 box yellow cake mix
4 eggs
1/2 c softened butter
1 c water
1/2 c creamy peanut butter
PEANUT BUTTER FROSTING
3 c confectioners’ sugar
1/2 c creamy peanut butter
1/2 c softened butter
2+ Tbsp milk
1 tsp pure vanilla extract
tiny pinch salt
Directions
1. Preheat oven to 325°F. Lightly grease 9 X 13 baking pan and set aside.
2. Using an electric mixer, cream the butter and peanut butter until well incorporated. Add eggs, cake mix, and water and beat on medium for two minutes. Pour into greased baking dish and bake for 40 minutes or until toothpick comes out clean. Cool completely before frosting.
3. Frosting: Cream the butter and peanut butter until well incorporated. Add confectioners’ sugar, extract, salt, and 2 tablespoons of milk and continue to mix until the frosting is nice and fluffy. You may need an additional tablespoon (or more) of milk if the frosting is too thick.
