Banana Breakfast Cookies

INGREDIENTS
- 3 very ripe bananas, mashed
- 1 1/2 cups unsweetened shredded coconut
- 1/2 cup walnuts, finely chopped or lightly ground
- 1 large egg, beaten
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
PREPARATION
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, stir together mashed banana and egg until fully combined, then mix in coconut and walnuts. Season with cinnamon and salt and stir to combine.
- Using a two tablespoon scoop, place dough onto baking sheet and gently press down with a fork. (Dough will be sticky.)
- Place baking sheet in oven and bake until lightly browned, 15-17 minutes. Cool before serving. Enjoy!
