Honey Mustard Potato Gratin

Ingredients
- 5 Yukon gold potatoes (about 1 lb), unpeeled, thinly sliced
- 1 medium-large onion, thinly sliced
- 1/2 cup gruyere cheese, grated
- 1 1/2 cups heavy cream
- 1/2 cup Dijon mustard
- 1/4 cup honey
- 1/4 teaspoon fresh thyme, finely chopped
- 3/4 teaspoon salt
- 1/4 teaspoon white pepper
Preparation
- Preheat oven to 375º F. and grease a shallow, 2 quart baking dish.
- In a large saucepan, over medium heat, combine honey, mustard, heavy cream, thyme, salt and white pepper. Stir until well combined and sauce begins to slightly thicken, then add potatoes and onion. Continue stirring until it reaches a simmer.
- Transfer to baking dish and sprinkle gruyere over the top. Bake 1 hour and 15 minutes, until potatoes are fork tender.
- Remove from oven and let sit for 15-20 minutes, until the sauce cools enough to slightly thicken. Serve and enjoy!
