No Mayo Broccoli And Blueberry Salad
20 minutes to prepare serves 6-8
INGREDIENTS
1 large head broccoli, cut into 1-inch pieces
1 cup blueberries
½ cup dried cranberries
3 tablespoons almonds, chopped or slivered
1 large apple, cored and cut into 1-inch pieces
½ small red onion, diced
2 teaspoons lemon zest (optional)
Dressing:
1 cup plain Greek yogurt
3 tablespoons honey
1/2 lemon, juiced
2 teaspoons apple cider vinegar
1 tablespoon water
PREPARATION
In a large bowl, toss diced apple, broccoli, blueberries, cranberries, onion, lemon zest, and almonds.
In a separate bowl, whisk together yogurt, honey, lemon juice, vinegar, and water. Pour over top of salad and toss to combine. Serve immediately or refrigerate for up to 3 days.
