No-Starter Cinnamon Amish Friendship Bread

INGREDIENTS
- 2 cups all-purpose flour
- 1 cup sugar
- 1 cup buttermilk
- 1/2 cup (1 stick) unsalted butter, room temperature
- 1 egg, room temperature
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- Cinnamon Topping:
- 1/2 cup sugar
- 1 1/2 teaspoons cinnamon
PREPARATION
- Preheat oven to 350º F.
- In a large bowl or mixer, cream together butter and sugar for 2-3 minutes, or until light and fluffy, then mix in egg and vanilla extract until incorporated.
- In a separate bowl, whisk together flour, baking soda and salt.
- Starting and ending with the dry ingredients, alternate between adding the flour mixture and buttermilk until just combined.
- Whisk together cinnamon topping ingredients (1/2 cup sugar and 1 1/2 teaspoons cinnamon) together and set aside.
- Pour 1/2 batter into loaf pan, then sprinkle with 1/2 cinnamon sugar mixture. Top with remaining batter and sprinkle remaining sugar mixture over the top.
- Place baking dish in oven and bake for 45-50 minutes, or until toothpick inserted in center comes out clean.
- Remove from oven and let cool 15-20 minutes. Slice, serve and enjoy!
