Ingredients to Gather
4 1/2 cups (542 g) all purpose flour
1 1/2 teaspoons (6 g) fine sea salt
1 tablespoon plus 1 teaspoon (16 g) baking powder
6 tablespoons (85 g) unsalted butter, melted
1 1/2 cups (177 g) water
Oil for frying
Your favorite toppings: taco style, guac, queso, or all of the above!

Start by mixing the flour, salt and baking powder in the bowl of an electric mixer that has a dough hook attachment. Then, add the melted butter and the water to the mixture and mix on low for between 2 and 3 minutes, or until the mixture is a smooth dough. If you prefer to mix the dough by hand, use a flexible spatula for 1 to 2 minutes and then once the mixture starts coming together, use your hands instead, kneading for between 4 and 6 minutes or until the dough is smooth.
When the dough is ready, wrap it tightly in plastic wrap and then let it rest at room temperature for half an hour and an hour. Now, lightly flour the surface you’ll be working on, and then unwrap the dough and cut it into 12 pieces of even size. Next, pour about 4 inches of oil into a deep pot, and heat until it reaches 350 degrees Fahrenheit. Roll out the dough one piece at a time, making it into a round shape that measures between 1/4- and 1/3-inch thick. Use a paring knife to pierce the center of each piece of dough.
Now, fry the dough in batches, cooking for about 2 to 4 minutes on each side, or until the dough is golden brown on each side. When the frybread is done, remove it from the oil and then place on a rack set and drain over paper towels. Serve either plain or with toppings, and either warm or at room temperature.
