These 4-Ingredient Cookies Are Our New Favorite…And You’ll Never Guess What They’re Made Of!

Pie Crust Pinwheel Cinnamon Cookies

Yield: approx. 2 dozen

Ingredients

  • 2 pie crusts, homemade or store-bought
  • 2/3 cup sugar (optional: mix half white and half brown sugar)
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2-2 1/2 tablespoons cinnamon

Directions

  1. Preheat oven to 350º F and line 1-2 baking sheets with parchment paper.
  2. Combine sugar(s) and cinnamon in a small bowl and mix together.
  3. Roll pie crusts out on a clean, lightly floured surface and roll each out into a large rectangle.
  4. Brush melted butter over the dough, then evenly sprinkle cinnamon sugar mixture on top.
  5. Starting with the long end closest to you, roll dough over itself to create a long log.
  6. Cut log into 1-inch rounds, then transfer them to lined baking sheets.
  7. Place baking sheets in oven and bake for 8-10 minutes, or until cookies are light golden.
  8. Remove from oven and let cool 5 minutes before transferring to a wire rack to cool completely.
