When my in-laws mentioned that they were coming for a visit, I instantly started planning. I don’t like having to do work around the house when we have company. They don’t come over often, so I wanted to give them my undivided attention. I did all the cleaning of the house and laundry, and then I started on the meal planning. I knew that we would go out to eat at least once during their weekend visit, but that left two breakfasts and a few other meals that had to be put together at home.
I had heard of breakfast casseroles before, but I never thought about putting it in the crock pot until I found this recipe on Group Recipes. It sounded like it was going to save a lot of time in the kitchen and it would be really filling. I was pleasantly surprised at how simple it was to make.
This went over really well with everyone at the table, even the kids. I couldn’t believe what a big pot this made for such an affordable price too. I make this all the time now when I know we have company coming for overnight stays.
Breakfast casseroles are one of the most versatile dishes that you are ever going to make. When you get the basic meat, cheese, and potatoes in, the rest is really up to you. There is no need to make any additional foods to go along with this because everything is already included in the pan. When my kids have their friends over for a sleepover party, I will do this with just the meat, cheese, and potatoes, just because the kids are likely to be picky about the veggies, but if I’m eating it, I load it up with all the veggies I can!
Check out what they are saying about this recipe over at Group Recipes:
“Hearty cheesy eggs with potatoes that will stick to your ribs!”
This will fill up the hungriest of crowds. Just give it a try and you will see!
