I have to say I’m not a very big fan of onions. I do use them in cooking and I don’t hate the taste, but I’ve just never thought too much of them. On the other hand, my husband is crazy about onions so I’ve kind of had to learn some creatives ways to serve them! I swear, he could probably eat onions for breakfast, lunch and dinner – and I am not even kidding! However, there’s one onion appetizer that I genuinely love.
Blooming onions were something we always had at our favorite restaurant when I was a kid. It was an old, family-owned place near our home – everyone knew the owners, and the owners knew everyone. Jack The Chef (we literally always referred to him that way) made the most incredible blooming onions you could think of.
I don’t know how, but my Dad was able to get his recipe at some point so we used to serve this appetizer at every BBQ. Sadly, the recipe was lost when he passed away so I have been trying to come up with something similar ever since. And I think this one is as close as it gets!
