Ingredients To Gather:
1 pound boneless chicken breasts
3/4 cup all-purpose flour
1 tsp. salt
1/4 tsp. ground black pepper
2 large eggs
3/4 cup bread crumbs
3 Tbsp. olive oil
Directions To Follow:
Cut chicken breasts or thighs lengthwise into strips.
In a bowl, place flour, salt and ground black pepper. Mix them together.
In a second bowl, beat the eggs.
In a third bowl, place bread crumbs.
Heat 1 1/2 Tbsp. olive oil over medium heat.
Coat each chicken strip first in flour mixture, then in eggs, then in bread crumbs.
Cook the chicken strips until lightly browned.
Transfer to a plate.
