Zucchini Breakfast Cake
40 minutes to prepare serves 8-10
INGREDIENTS
- 2-3 medium zucchinis, grated
- 1 large onion, chopped
- 1 cup all-purpose flour
- 1/2 cup cheddar cheese, grated
- 1/2 cup extra-virgin olive oil
- 1/2 cup sliced deli ham, chopped
- 5 eggs, beaten
- 2 teaspoons baking powder
- 1 clove garlic, minced
- Kosher salt and fresh ground pepper, to taste
PREPARATION
- Preheat oven to 350°F and line a 9×13-inch baking dish with parchment paper.
- Combine all ingredients in a medium bowl. Season to taste with salt and pepper, and stir until well incorporated. Pour into prepared baking dish and bake until eggs are set and the top is golden brown, about 30 minutes.
- Let cool 5 minutes before slicing and serving. Enjoy!
